Nothing beats chicken cooked with some creamy pumpkin. It’s a healthy and tasty dish that has a thick and creamy pumpkin broth with tenderized chicken meat. It’s absolutely a delight to eat. Most kids don’t like vegetables but this sweet and creamy recipe will make them change their minds.

* ​​​​Ingredients

  • 3-4 tbsp of butter
  • 2 cups of diced celery
  • 3-5 shallots chopped thin or 1 large white onion, finely chopped
  • 1 can of 100% pure pumpkin puree
  • 1 cup of smooth/creamy peanut butter
  • 1 1/2 cup of almond milk or
  • 3/4 cup of whole milk
  • 3-5 cloves of minced garlic
  • 1 quart chicken or vegetable broth
  • red pepper to taste
  • ground ginger 1/2 tbsp
  • pinch of nutmeg
  • 1/2 tbsp curry powder
  • 2-3 Chicken breasts cut into chunks
  • 2 chicken thighs

NOTE: If you do not like the taste of peanut butter use the following ingredients instead:

  • 1-2 medium-sized potatoes, diced
  • 1 cup of canned sweet corn
  • 1 cup of shredded cheese (parmesan or colby jack) - added at the last 30 minutes

Garnishment <optional>:

  • Chopped green onions or scallions
  • Peanut tidbits

  1. Mix all ingredients in the slow cooker except the chicken breasts and thighs. Give it a stir to make sure everything is evenly distributed:
  2. Add the chicken breasts and thighs on top. Give it a quick stir and set your crockpot.
  3. Cook on high for 3-4 hours or on low for 6-8 hours.
  4. Once ready, garnish with Chopped green onions or scallions or add peanut tidbits on top of the soup and the chicken then serve!

TIP: The soup in itself can be cooked without adding the chicken and it is still a wonderful treat!

Crock Pot Honey-Garlic Chicken

It includes a few vegetables which enhances the overall taste and can be very appetizing. There are a few steps added to make the chicken look appealing but it’s totally optional.

* ​Ingredients

Sauce:

  • 3 cloves of minced garlic
  • 1/2 cup soy sauce
  • 1/2 cup Ketchup
  • 1/3 cup honey
  • 1-2 tbsp of Italian seasoning
  • Salt and Pepper to taste

Vegetables:

  • 16 oz string beans, cut into 1 1/2 inch sizes
  • 3-4 medium-sized red or regular potatoes, quartered or cut into chunks
  • 3 cloves of minced garlic
  • 1 red/white onion, finely chopped
  • Salt and Pepper to taste

Chicken:

  • 5-6 Skinless Chicken thighs or Chicken Breasts

NOTE: If you do not have italian seasoning, you can use the following ingredients instead:

  • 1/2 tsp oregano
  • 1 tbsp of dried parsley

Optional: Slurry - Mix 3 tbsp of cornstarch with 1/2 cup of cold water

* Directions

  1. Mix the vegetables at the bottom of your crock pot and season with salt and pepper and then place the chicken thighs or breasts on top. You can season the chicken with 1 tbsp of Italian seasoning for added flavor or just leave it as is.
  2. In a separate mixing bowl, mix all the ingredients for the sauce. Whisk it together and pour it over the chicken and vegetables. Cover with lid and cook on high for about 3-4 hours or on low for about 6-8 hours.
  3. Once ready, you can transfer the chicken into a baking sheet and broil it for about 3-5 minutes or until golden brown. If you do not have a broiler, you can simply toss it in a non-stick pan just for the sauce to caramelize and add color to the chicken.
  4. You can add the slurry at the last 10-15 minutes of the cooking time and give it a quick stir for a thicker sauce.
  5. Serve and enjoy!

TIPS: The vegetables can be modified to whatever you have in your kitchen. You can use carrots, radish or turnips. You can also use any part of the chicken that you like. Most people prefer the boneless ones but you can choose to include the bones and skin.

Orange Chicken Crock Pot

It’s usually lemon and chicken but this time it’s orange and chicken. The unique flavor of the sweeter orange is also very delicious when combined with chicken. This variation is inspired by the Asian cuisine and it is a creative savory dish.

The sweet and sort of tangy flavor it gives the chicken and vegetables can win a lot of hearts, not to mention stomachs, too! It was originally cooked in North American Chinese restaurants and became popular through the years.

* ​Ingredients

Sauce:

  • 1 tsp rice wine vinegar
  • 2 tbsp of soy sauce
  • 1/2 tsp sesame oil
  • 3 tbsp brown sugar
  • 3/4 cup orange marmalade
  • 1/2 tsp Salt
  • 1/2 tsp black pepper
  • 1 cup of chicken stock

NOTES: Salt and pepper to taste if you’d like the added flavor. If you do not have orange marmalade on hand, you can use fresh orange squeeze with orange zest from 1 orange <about 1/4 cup>).

Chicken:

  • 1-1/4 lb of Boneless Skinless Chicken thighs, cut into bite size pieces
  • 1 Egg White
  • 2 Tbsp of Cornstarch
  • Salt and Pepper, to taste
  • Vegetable Oil

NOTE: You can also use chicken breasts

For Serving <Highly recommended>

  • Rice
  • Finely sliced green onions or scallions

* Directions

There are 2 preparation steps for the orange chicken using the crockpot. First would be the chicken and then the sauce.

Preparing the Chicken:

  1. In the crockpot, place the boneless, skinless chicken thighs. Add the cornstarch and season with salt and pepper to taste, vegetable oil, and egg white.
  2. Give it a good mix and set it aside for about 7-10 minutes. (Do not plug the crockpot yet)
  3. After 10 minutes, cook under high for 3 hours.

Making the Sauce and Completing the Recipe:

  1. Mix the rice wine vinegar, soy sauce, sesame oil, brown sugar, orange marmalade, salt and pepper, and chicken stock. Mix everything well together.
  2. Once the chicken has been cooked for 3 hours, add the sauce in the crockpot and just give it a quick mix. Cook for another 30 minutes.
  3. Serve it with rice and enjoy!

TIPS:

  • You can use barbecue sauce as substitute for the rice wine vinegar and the sesame oil.
  • If you don’t have chicken stock, you can leave it out and it would still turn out well.
  • If you don’t want to cook the chicken for 3 hours, you can fry them in a skillet for about 15 minutes and then afterward, drain and mix the chicken and sauce in the crockpot and cook on high for 2 hours.

Although a crock pot is not really ideal for barbecue, people find ways and means and so there is a good way for you to be able to use your crock pot to cook chicken <or any type of meat for that matter> like it had been barbecued but is originally cooked inside a slow cooker.

* ​Ingredients

  • 3-4 Chicken Breasts cut into medium-sized chunks (about 2” thick)
  • 3 tbsp olive oil
  • 3-4 cloves garlic minced
  • 1-2 small stalks of rosemary (can be replaced with thyme), finely chopped
  • Lemon juice from 1 whole lemon
  • 1 tbsp lemon zest
  • 1 tsp paprika
  • Green and Red Bell Peppers cut into large even pieces
  • 1-2 tbsp soy sauce or more if you prefer
  • 3 tbsp brown sugar

* Directions

Now, for the chicken to have that nice presentation of being skewered or barbecued, there are 3 parts for this recipe. Preparing the chicken in the crockpot and then finishing off with the grill so it will be nicely charred.

Marinade:

  1. Place the chicken breasts in the crockpot and then add the olive oil, garlic, rosemary, lemon juice and zest, paprika, soy sauce and brown sugar.
  2. Mix everything well together and make sure that all the pieces of the chicken meat are smothered by the sauce. Put in the fridge and marinade for about 30 to 45 minutes.

Chicken in the Crockpot:

  1. Once the chicken has been marinating for about 30-45 minutes, transfer everything in the crockpot and cook on high for about 1 hour and 30 minutes.
  2. After the 1hr and 30 minutes cooking time, drain the cooking liquid in a bowl. Transfer the chicken chunks into the metal skewers and add some bell peppers in between.
  3. Using a pastry brush, you can brush some sauce over the skewered chicken and bell peppers and grill them until they are charred and golden.
  4. Serve and enjoy.

TIPS:

  • Aside from bell peppers, you can use red onions, okra and eggplant together with the chicken.
  • You can add honey to the barbecue sauce to glaze the barbecue and give it a good color and taste.
  • You can also add a bit of ketchup to the marinade mix and the flavor is very good.

Moroccan Style Chicken Tagine Crock Pot

  • 1 tsp ground cinnamon
  • 1 cup chicken broth/vegetable broth
  • 1 tsp kosher salt
  • 1 tsp turmeric
  • Ground black pepper to taste
  • Fresh parsley, finely chopped

NOTES:

  • You can use pitted dried plums or black olives in place of green olives.
  • You can also add chopped tomatoes for added flavor
  • You can use red onion if you like its strong taste

* Directions

  1. In a 4 quart or 6 quart crock pot, place the onions, garlic, carrots, prunes, olives and pour the chicken broth. Place the chicken pieces on top, carefully place them in a layer and set aside.
  2. In a small bowl mix all the dry ingredients: flour, paprika, cumin, cinnamon, salt, ground black pepper and turmeric. Mix them together and add into the pot over the chicken and vegetables.
  3. Put the lid on and then cook on low for 8-10 hours or on high for 4-5 hours.
  4. Serve with some lemon squeeze or lemon wedges and sprinkle some fresh parsley as toppings.
  5. Enjoy!

TIPS:

  • This crockpot recipe goes well with Arabic bread or some fluffy rice if you have any.
  • Tagine is a dish that has no permanent set of ingredients. You can change the vegetables and measurement of spices to your liking.
  • If you like a thicker broth, you can use red lentils, beans or chickpeas.

Hawaiian Chicken Crock Pot

* ​Ingredients

  • ​3-4 Chicken breasts or 4-5 chicken thighs (can be boneless skinless or with bones and skin)
  • 1 can of pineapple slices with all the juice
  • 1 cup of barbecue sauce
  • 1/2 cup red or green bell pepper, diced
  • 1/2 cup bacon, diced into tidbits
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 3 tbsp brown sugar

NOTES: You can use ketchup if you do not have barbecue sauce on hand.

* Directions

  1. Place the chicken pieces inside the crockpot. Add the bell pepper and bacon. Put a lid and set aside. Don’t plug it in yet.
  2. Drain the pineapple juice from the can into a large bowl. Set aside the slices for now and add the other ingredients: barbecue sauce, worcestershire sauce, onion powder, garlic powder, brown sugar and a bit of salt and pepper or more, if you like.
  3. Mix everything well together and then slice the pineapple slices into chunks and add them to the mixture. You can also crush the pineapple slices if that is what you prefer.
  4. Give it one last stir and pour the mixture into the crockpot over the chicken, bell pepper and bacon.
  5. Cook on high for 3-4 hours and on low for 6-8 hours.
  6. Once ready, you can serve it with rice or with crusty bread.

TIPS:

  • If you use skinless chicken breasts, you can break it into pieces once tenderized and then serve it as the main meat in a bun - much like a hamburger. You can add some lettuce and put the sauce in it a bit and it will be very delicious.
  • If you use chicken thighs with bones, they are perfect for dinner with mashed potatoes or potato wedges.
  • You can put the slices as is and then break it once cooked, it would look good. If you use crushed pineapple on the other hand, the flavor will mix well with the sauce.

Reminders When Using the Crock Pot

  1. Do not lift the lid and peek inside as it will let temperature fall and it will take another hour or 2 before the crock pot would be able to reach the same well-balanced temperature from before you lifted the lid.
  2. Make sure to wash and sear the meat if needed to keep the dish fresh and healthy.
  3. Chicken might not come out as bright and as colorful especially when you have the skin and bones on. If you’re worried about the color or presentation, broil for a few minutes in the oven after cooking from the crock pot so it would look great and appetizing.
  4. Make sure that the size of your crock pot is enough to fit all the ingredients inside so everything will be cooked evenly and beautifully.
  5. Thaw any frozen food that you would be including in your recipe so that it would not be hard for the crock pot to heat up or to reach the right temperature to cook all the ingredients
