1. Ricotta and Avocado Salad

If you're a fan or rich, flavorful salads, you'll fall in love with this fuss-free ricotta and avocado salad.

* Ingredients of Recipe

  • 1 pack of fresh spinach or kale 
  • 2 tablespoons olive oil
  • 1 tablespoon of balsamic vinegar
  • 1/2 cup of ricotta cheese
  • 1 large tomato
  • Half an avocado 
  • 2 tablespoons of basil
  • 1/4 fresh basil leaves
  • 1/4 teaspoon rock salt
  • 1/4 teaspoon black pepper

* Step by Step Directions

  1. Mix 2 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 1/4 teaspoon of rock salt and 1/4 teaspoon of black pepper in a small mixing bowl. This mixture will serve as your salad's dressing.
  2. Finely cut up 1/4 cup of fresh basil leaves.
  3. In a second bowl combine 1/2 cup of ricotta cheese with your freshly cut basil.
  4. Dice half an avocado into small cubes.
  5. Add your mouth sized avocado cubes to the bowl containing your ricotta cheese and freshly cut basil.
  6. Pour one pack of spinach or kale into a large serving bowl. If you prefer to use lettuce, feel free.
  7. Spoon your avocado and ricotta cheese mixture on top of your spinach, kale or lettuce.
  8. Slice your tomato into cubes and sprinkle your tomato cubes with salt.
  9. Place your tomatoes on top of your salad.
  10. Lastly, drizzle the ingredients of your small mixing bowl over your salad.

2. Fried Ricotta, Grilled Mushroom, Beetroot Salad

* Ingredients of Recipe

  • 1 and a 1/2 cups of ricotta cheese 
  • 1/4 cup of parmesan cheese
  • 3 eggs
  • 4 ounces of mushrooms 
  • 1 tablespoon of breadcrumbs
  • 2 tablespoons of flour
  • 1/4 cup of olive oil
  • Half a can of beetroot
  • 4 cups of spinach or kale
  • 1/4 teaspoon rock salt
  • 1/4 teaspoon of black pepper
  • 2 teaspoons of freshly squeezed lemon juice

* Step by Step Directions

  1. Hard boil two of your three eggs and slice your boiled eggs.
  2. Place 1 and a half cups of ricotta cheese, 1/4 cup of parmesan cheese, your hard boiled eggs, 1 tablespoon of breadcrumbs and 2 tablespoons of flour in a medium or large sized mixing bowl.
  3. Cover your bowl with a plastic wrap and place it your freezer for 50 minutes.
  4. Add one tablespoon of olive oil to a pan and set your element to a medium heat. Cook your mushrooms for 6 minutes, so that they are lightly browned. Place your mushrooms in a small bowl.
  5. Sprinkle flour into a small bowl and roll your ricotta cheese into your flour to create ball-shaped ricotta balls.
  6. Fry each ricotta ball for four minutes per side. Making sure not to burn your ricotta balls.
  7. In a serving bowl layer your spinach or kale with your grilled mushrooms, boiled eggs and ricotta balls.
  8. Season your salad and drizzle your salad with 2 teaspoons of freshly squeezed lemon juice.
